How Organic Chocolate is Made: A Behind the Scenes Tour at Belgian Delight
SA
The Journey from Bean to Bar
Welcome to Belgian Delight, where the art of making organic chocolate is both a science and a passion. Our journey begins with the selection of the finest organic cacao beans, sourced from sustainable farms around the world. These beans are handpicked to ensure only the best make their way into our chocolate.
The process of transforming these raw beans into exquisite chocolate bars is a meticulous one. It involves several key stages, each critical to developing the rich flavors that Belgian chocolate is renowned for. Join us as we explore the fascinating steps involved in crafting our beloved treats.

Fermentation and Drying
Once harvested, the cacao beans undergo fermentation, a crucial step that enhances their natural flavor profile. This process typically takes place in large wooden boxes and lasts about five to seven days. During fermentation, the beans heat up and are turned regularly to ensure even fermentation.
After fermentation, the beans are spread out under the sun to dry. This step reduces the moisture content and prepares them for transport. The drying stage is essential for preserving the beans and preventing mold or spoilage during storage.

Roasting and Winnowing
Upon arrival at our Belgian Delight facility, the dried cacao beans are carefully roasted. Roasting is where the magic truly begins, unlocking the beans' complex flavors and aromas. The temperature and duration of roasting are adjusted depending on the bean variety to achieve the perfect flavor balance.
Next comes winnowing, a process where the outer shell of the bean is removed to reveal the nibs. These nibs are the heart of chocolate making, packed with intense cocoa flavor.

Grinding and Conching
The cacao nibs are then ground into a liquid known as chocolate liquor. Despite its name, this liquor contains no alcohol but instead forms the base for all chocolate products. At Belgian Delight, we take pride in our precise grinding techniques that ensure a smooth texture and rich taste.
Conching follows grinding and involves continuously mixing the chocolate liquor with other ingredients like sugar and milk (for milk chocolate) for hours or even days. This process refines the chocolate's texture and enhances its flavor, resulting in the silky smoothness that defines our chocolate.
Molding and Packaging
The final stage in our chocolate-making journey is molding. The conched chocolate is poured into molds to create bars or other confections. Each mold is carefully monitored to ensure consistent thickness and quality.
Once set, the chocolate is packaged with care, ready to be enjoyed by chocolate lovers worldwide. At Belgian Delight, we pride ourselves on using eco-friendly packaging materials that align with our commitment to sustainability.
